How to prepare the perfect pastry buffet

Creating a pastry buffet requires an enormous amount of thought and planning but the results are so rewarding. To create a buffet for your next event, use our proven steps to streamline the process, making it a bit easier.

Consult with your client

The initial step to creating a dessert buffet begins with a consultation with the host. This critical step helps you understand exactly what the host requires. Below is a list to guide you:

  1. Number of guests
  2. Required desserts
  3. Theme and coordinating colors
  4. Table length
  5. Size of dedicated surrounding space
  6. Flow of traffic
  7. Savory food items served
Armed with these answers, begin building the structure of the display. Sketching the display with pencil and paper may even help create a visual idea of placement for the pastries, florals, and linens.

Dessert Menu

Experience has taught me that each guest consumes 2-3 miniature desserts with a few resisting temptation and forgoing the entire buffet. Yet it is best to err on the side of caution and to prepare a few additional pastries for the sake that your guests want more. Consider increasing quantities if desserts are the only food items served at the event.

Keep it simple

The simplest buffet begins with a centerpiece with complimentary desserts arranged around this focal point. Use tiered cake stands, apothecary jars and floral arrangements to create varying heights and interest. Lastly, linens and labels are not only functional but add special, finishing touches. It is extremely important to identifying allergens to assist guests maintaining dietary restrictions. Be certain that these important details fit the overall theme that the host desires.
