Learn how to bake gluten-free cookies

Over the years I've studied food trends and although some trends come and go the gluten-free movement shows no signs of slowing. Moreover, early 3.1 million Americans maintain a strict, gluten-free diet.*

At Chic Sweets Fine Desserts, we constantly update our menu to meet the demand and offer pastries to those who practice an allergen-friendly diet.

In fact, at any given time of the year our gluten-free brownies are the most popular items on the menu. Our clients can hardly believe that the brownies are gluten-free!

In this newsletter installation, I'm sharing our gluten-free peanut butter and chocolate chip cookie recipe. These are the same cookies sold at the Nordstrom Department Store Ebar in The Woodlands, Texas in years past. 

Now I am sharing with you my recipes and baking tips too! I hope that you enjoy my quick and easy baking lesson but most importantly, I hope to encourage you to introduce more gluten-free products in your diet! 


Gluten-free Peanut Butter Chocolate Chip Cookies


Ingredients:

1/2 cup unsalted butter, melted

1 cup brown sugar

1 cup granulated sugar

1 1/2 cup creamy peanut butter

3 eggs

2 teaspoons baking soda

1 teaspoon vanilla

2 cup gluten-free quick oats

2 1/2 cup gluten-free old-fashioned oats

1 cup semi-sweet chocolate chips

1 cup semi-sweet chocolate chunks

1 cup white chocolate chips


Directions:

Preheat oven to 350 degrees.  Blend butter, brown sugar, granulated sugar together.  Add peanut butter, eggs, baking soda and vanilla.  Add Oats and blend together very well.  Add all chocolate chips.  Using an ice cream scoop form 18 cookies and press onto a cookie sheet to form a large cookie.  Cookies will spread more as they bake.  Bake for 18-22 minutes.  Allow to cool before serving.
